The Secret of the Bermuda Guinea Chick
Despite its name, the Bermuda Guinea Chick isn’t a bird at all — it’s a petite species of spotted spiny lobster that thrives in our island’s coral reefs. Known for its white-dotted shell and sweet, delicate flavor, the guinea chick is a rare Bermudian delicacy found nowhere else in the world.
Its name likely comes from its speckled shell, said to resemble the plumage of a guinea fowl. But while the name may have taken flight from land, the creature itself is pure ocean magic — elusive, sustainable, and delicious.
When guinea chicks appear on a menu, Bermudians know the season has truly begun. So dive in to a celebration of Bermuda’s seas — a feast of flavor, friendship, and the ocean itself.
